Mujaddara

This is a popular Arab dish composed of cooked rice and brown lentils seasoned with cumin. Warm or cold, you can have it with a bit of yoghurt. Easy,cheap and healthy. So simple yet so delicious









This is all you need.

 You can cook the rice and lentils in two separate pots, then mix them together at the end


  With added oil and spices, this is the end product. Recipe below.

It goes perfectly with cool, cold yoghurt or a nice salad.


To Make 4 servings you will need:

1 cup of brown lentils
1 tbsp coconut oil (just my preference, you can use olive oil)
2 cloves garlic, minced
1 tsp cumin
1.5 cups rice
1/3 cup olive oil
seasoning

Rinse lentils in cold water.

Heat the oil in a large pot, once hot add garlic. fry for 1-2 minutes then add the lentils followed by enough water to cover the lentils plus an inch. Bring to the boil then let it simmer until the lentils are soft and cover until the water is absorbed.

In a separate pot cook the rice. Once the lentils and rice are cooked add the rice to the lentils mixture followed by the oil and seasoning.

et voila, your dinner is ready.

The rice to lentil to ratio can be altered based on your preference, some people prepare browned/carmalised onion to have with this as well.
